I like to do extra sharp cheddar, parmesan, smoked gouda, gruyere, and sometimes Monterey Jack or fontina. But I’ll throw in almost anything I got
3 or 4 depending on how I’m feeling with heavy whipping cream to keep it dense.

@blackbeautifulsupreme a ton of eggs.. Sorry.. The only thing I can suggest to try and achieve that creamy texture you want is to really focus in on your bechamel sauce and nail that… The ratio of liquid to cheese should be on point for you and getting “creamy”.. Make sense?

I use several different cheeses in mine Chef, from a mixture of gruyère, Swiss Monterey and several Italian cheeses. Makes a beautiful bechamelsaus @mrfoodtastic I always make a lobster mac&cheese, it’s a must for the family and my husband’s job when they do shared lunch for the holidays.
