With #Thanksgiving right around the corner, I’m seeing gorgeous turkey recipes all over Instagram that look incredible. However, I’ll be the first one to admit that I’m not the biggest fan of turkey. 😬 So every thanksgiving, my family makes chicken instead! This year I’m making oven roasted Tandoori chicken. This recipe calls for chicken to be marinated for 12 hours in Indian spices like cumin, cloves, cinnamon, cardamom, red chilies, turmeric, ginger and garlic, and then baked and broiled in the oven until slightly charred. The result is the most tender and perfectly spiced chicken that melts in your mouth. This is an Indian classic that can add a burst of flavorful protein to any meal, so enjoy leftovers post Thanksgiving. Chop it up and put it in a salad, pair it with some fall roasted veggies, or put it in a wrap or sandwich with some tomatoes and onions for a perfect lunch.
